Dressing
1 clove of garlic, crushed
1 Tbsp. anchovy paste
pinch of salt
1 egg yolk
4 Tbsp. lemon juice
1 tsp. Dijon mustard
2 Tbsp. olive oil
2 Tbsp. canola oil
Salad
1 package Revol Greens Romaine Twins
Parmesan cheese
Caesar salad croutons
In a small jar or bowl, combine anchovy paste, pinch of salt, egg yolk, lemon juice, Dijon, and oils. Smash garlic with the side of a knife to open it up (but don’t mince it!) and add to jar. Shake or whisk until emulsified and smooth. Let clove of garlic sit in dressing until ready to use.
Slice heads of romaine in half lengthwise and place on a plate.
Drizzle with dressing and sprinkle with freshly grated Parmesan cheese and croutons.
