Creamy Broccoli Potato Soup

  • 2 cups Revol Greens® Organic Mighty Spring Mix
  • 1 tablespoon avocado oil
  • 2 shallot cloves, minced
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried basil
  • 1-2 teaspoons salt
  • 6 cups chopped broccoli
  • 2 large Yukon gold potatoes, unpeeled and chopped (4 cups)
  • 4 cups vegetable broth
  • ½ cup frozen peas
  • ¼ cup nutritional yeast
  • Optional: croutons for serving


  1. Add the oil to a big soup pot and heat to medium-high. Add the shallots and garlic. Cook for 5 minutes.
  2. Add the spices and stir for one minute, then add the broccoli, potatoes, and broth. Cook on medium for about 15 minutes or until the potatoes are tender.
  3. Add in frozen peas, Mighty Spring Mix, and nutritional yeast. Stir for a few minutes until the peas are thawed.
  4. Working in batches, add to a blender and blend until smooth. Serve!

Prep time: 10 minutes

Cook time: 20 minutes
