Ingredients

Lentil Lettuce Wraps

  • 2 cups cooked green or brown lentils
  • 1 diced shallot bulb
  • ½ cup dairy-free or regular feta cheese
  • ½ cup pomegranate seeds + more for topping
  • ¼ cup chopped cilantro
  • 1 teaspoon lime juice
  • 1 head Revol Greens® Butter Leaf Lettuce

Dressing

  • 3 tablespoons olive oil
  • Juice of 1 ½ limes
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon maple syrup
  • 1 teaspoon pink Himalayan salt
  • 1 teaspoon sumac
  • 1 teaspoon za’atar

Instructions

  1. In a large bowl combine the lentils, shallots, feta cheese, pomegranate seeds, cilantro, and lime juice.
  2. In a small bowl combine the dressing ingredients.
  3. Pour the dressing over the lentil mixture and toss.
  4. Distribute the lentil mixture into the Butter Leaf Lettuce leaves and top with more pomegranate seeds.
