Embrace spring with our Spring Buddha Bowl, a dish that highlights the fresh, crisp flavors of our Organic Romaine Twins.


Ingredients

Buddha Bowl

  • 1 ½ heads of Revol Greens® Organic Romaine Twins, chopped
  • 1 bunch asparagus, tough ends discarded and chopped
  • 2 cups shelled edamame
  • 2 heirloom green tomatoes, chopped
  • 1 green pepper, diced
  • 1 cucumber, diced
  • 1 cup peas
  • 1 cup cooked quinoa or farro
  • ¼ cup toasted pumpkin seeds

Sauce

  • ½ avocado
  • ½ head chopped Revol Greens® Organic Romaine Twins
  • Juice of one lemon
  • ½ cup parsley
  • ½ cup cilantro
  • 1 tablespoons tahini
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons of water

Instructions

  1. Put all sauce ingredients into a blender and blend until smooth. If you want the sauce thinner, just add more water.
  2. Steam the asparagus for 4-5 minutes using a steamer basket or cook in a small amount of water.
  3. Add the chopped romaine to a large bowl or 3 smaller, shallow bowls.
  4. Now add the asparagus, tomatoes, green pepper, cucumber, peas, quinoa, and pumpkin seeds.
  5. Add the sauce to the center of the bowl and serve.
